Japanese style chicken ham cooked with "shio-koji" and miso sesame dressing

Shiokoji is a magical ingredient which enhance umami flavour, also tenderise meat.
I will write about Shiokoji in next couple of days. I just admire the simplicity of using Shiokoji and the outcome is always tasty.
