The main is 'Nikujaga' direct meaning is meat and potatos. In Japan, Nikujaga is the most popular example of "Ofukuro-no-aji" which is mother's food. The meat we use in Nikujaga is depending on the regions. In the west beef is common and in the east pork is common. I sometimes use chicken!! Nikujaga is our comfort food. I have introduced about this magical ingredient "Shiokoji" other day. I would like to talk deeper about it today. Shiokoji is traditional ingredient of Japanese cooking its root is in Tohoku (Northern Japan).
Shio means salt, and koji is bacteria used to ferment foods or make alcoholic drinks.
What is Koji?

Today's tasting tray One of the most popular dish in Japan "Hanbagu ハンバーグ" with Teriyaki sauce. Hanbagu is Japanese style meatball which normally made with mixed mince(pork and beef). The sauce can be chosen from hundreds and thousands of varieties, soy flavour to tomato flavour. Lots of seasonal ingredient are used. Miso soup warms you up. A perfect winter meal is here at Nana's.
